Matcha, a green tea powder also known as "mocha," originated in the Tang Dynasty. During the Southern Song Dynasty, Zen masters introduced it to Japan, where it was brewed thick as bean soup and stirred with the brush used in the tea ceremony until a large amount of foam was produced, before being poured into each bowl and handed to the guest to drink. For over 500 years, bamboo has been used to create the traditional Japanese tea whisk, as conventional metal whisks can leave tea with a bitter taste.
